Graduation parties require planning and will put your math skills to work.

How many potatoes would it take to make potato salad for 50 people? If I wanted a luncheon tray, along with everything else I am serving, how much luncheon meat should I buy?

Some tips would be 18-20 slices of luncheon meat per pound when purchased sliced. From shaved meat, you will get 10 sandwiches per pound. For cheese, always purchase sliced, never shaved. There are 15 slices of cheese per pound. From one tomato, you will get eight slices.

Potato Salad for 50

8 pounds red potatoes

2 dozen eggs (boiled)

1 stalk celery, chopped fine

1 medium onion, chopped fine

8 ounces pimentos, chopped fine

¾ teaspoon celery seed

½ cup dry parsley

Salt and pepper to taste

1 large jar mayonnaise

Boil potatoes until tender but not overdone. When cool, peel and dice. Boil eggs for 20 minutes. Plunge immediately into cold water (makes them easier to shell). Grate them on the large side of the grater. Wash the celery well and dry. Then chop very fine along with the onion. Chop your pimento very fine, add the juice to potatoes. In a large pan mix all ingredients well. Add one large jar mayonnaise and mix again. Chill well before serving.

Sparkling Fruit Punch

(serves 50)

16 ounce can frozen lemonade

16 ounce can frozen orange juice

16 ounce can frozen pineapple juice

92 ounces orange juice

1 package orange flavor powdered drink mix

2 quarts water

2 quarts ginger ale

2 quarts lemon soda

2 cups sugar

Combine the first five ingredients, sugar to taste (about 2 cups) Add ginger ale and soda just before serving. To have a red punch, use Hawaiian punch and cherry powdered drink mix.
